Copycat Classic Carol Chicken Salad Chick

A delightful chicken salad combining shredded chicken with crunchy celery and a creamy dressing, perfect for lunch or a light dinner.

  • 1 lb chicken (finely shredded)
  • 1 celery stalk (finely minced into 1/8-inch pieces)
  • 1 cup mayonnaise
  • 3/4 tsp onion powder
  • 3/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper (freshly ground)
  • 1/4 tsp paprika

Instructions

  1. Prepare your chicken. If you don’t have pre-cooked chicken, boil or bake it until fully cooked and then shred it finely.
  2. In a large mixing bowl, add the shredded chicken and finely minced celery.
  3. In another bowl, combine the mayonnaise, onion powder, garlic powder, salt, black pepper, and paprika. Mix well.
  4. Pour the mayonnaise mixture over the chicken and celery. Stir until everything is thoroughly combined.
  5. Taste and adjust seasoning if needed. Cover and let chill in the fridge for at least 30 minutes before serving.

Notes

Use fresh, cooked chicken for the best flavor. Rotisserie chicken works great for convenience. Feel free to adjust the seasonings or add chopped herbs.
