Crock Pot Chicken and Rice

An easy and comforting one-pot meal perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup rice (uncooked)
  • 2 cups chicken broth
  • 1 cup shredded cheese
  • 1 can cream of chicken soup
  • 1 cup frozen mixed vegetables
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Place the chicken breasts in the bottom of the crock pot.
  2. Add the uncooked rice on top of the chicken.
  3. Mix together the chicken broth, cream of chicken soup, frozen vegetables, garlic powder, onion powder, salt, and pepper in a separate bowl.
  4. Pour the mixture over the chicken and rice in the crock pot.
  5. Cover and cook on low for 360-480 minutes or high for 180-240 minutes.
  6. When done, stir in the shredded cheese until melted and well combined.
  7. Serve warm.

Notes

For a creamier texture, add more cream of chicken soup or cheese. Customize with different vegetables or proteins.
