Cucumber, Onion, and Tomato Salad

A fresh, quick salad featuring diced tomatoes, cucumbers, and onions, dressed in a light vinegar dressing.

Ingredients

  • 3 tomatoes, diced
  • 3 cucumbers, peeled and sliced
  • 1 onion, thinly sliced
  • 1/2 cup vinegar (white or apple cider)
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 1 teaspoon cracked pepper
  • 1/4 cup olive oil
  • 1 cup water

Instructions

  1. In a large bowl, combine the diced tomatoes, sliced cucumbers, and onion.
  2. In another bowl or jar, whisk together vinegar, sugar, salt, pepper, water, and olive oil until fully combined.
  3. Pour the dressing over the vegetables and toss gently to coat.
  4. Chill in the refrigerator for at least 15-20 minutes to enhance flavor.
  5. Serve chilled or at room temperature.

Notes

For less sharp onion flavor, soak the sliced onion in cold water for 5–10 minutes, then drain. Adjust salt or sugar in the dressing to taste.
