Cucumber Tomato Avocado Salad

A fresh salad mixing crunchy cucumber, ripe tomato, and creamy avocado with a light lemon and olive oil dressing.

Ingredients

  • 2 cucumbers, diced
  • 2 tomatoes, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Combine the diced cucumbers, tomatoes, avocado, and cilantro in a large bowl.
  2. Whisk together the lemon juice, olive oil, salt, and pepper in a separate small bowl.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Serve immediately and enjoy!

Notes

Choose ripe but firm avocado and use fresh cilantro for bright flavor. Store in an airtight container in the fridge for up to 24 hours.
