Easy Lemon Curd

A delightful treat that adds a burst of tangy flavor, perfect for spreading on toast, filling pastries, or topping desserts.

Ingredients

  • 1 cup lemon juice (freshly squeezed)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter
  • 1 tablespoon lemon zest

Instructions

  1. In a medium saucepan, combine the lemon juice and sugar over medium heat. Stir until the sugar dissolves.
  2. In a separate bowl, whisk the eggs. Gradually add a small amount of the hot lemon mixture to the eggs to temper them, then whisk the egg mixture back into the saucepan.
  3. Continue to cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 10 minutes).
  4. Remove from heat and stir in the butter and lemon zest until smooth.
  5. Let the curd cool, then transfer it to a container and refrigerate until set.

Notes

Use fresh lemons for the best flavor and stir constantly to prevent burning.
