Easy Slow Cooker Greek Chicken

A delightful and simple dish that brings the flavors of Greece right to your kitchen with minimal effort.

  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

  1. Combine chicken broth, olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper in the slow cooker.
  2. Add the chicken breasts and make sure they are well coated with the marinade.
  3. Top with cherry tomatoes and Kalamata olives.
  4. Cover and cook on low for 360 minutes or on high for 240 minutes, until the chicken is fully cooked.
  5. Before serving, sprinkle feta cheese on top and garnish with fresh parsley.

Notes

You can serve this Greek chicken with rice or use it for gyros. Pairing with a fresh salad or warm pita bread is recommended.
