Easy Taco Stuffed Sweet Potatoes

A healthy and delicious meal combining taco flavors with sweet potatoes, perfect for busy weeknights or meal prep.

  • 1 lb. ground beef
  • ½ a white onion, chopped
  • 2 garlic cloves, minced
  • 14.5 oz canned fire roasted diced tomatoes (not drained)
  • 1 Tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 sweet potatoes
  • Olive oil
  • Guacamole
  • Cheddar cheese
  • Pico de gallo
  • Sour cream

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking pan with parchment paper.
  2. Wash and scrub the sweet potatoes thoroughly, then pat them dry.
  3. Poke several holes all over each potato using a fork.
  4. Place the potatoes on the pan, rub them with olive oil, and season with salt and pepper.
  5. Bake for 40-45 minutes until tender.
  6. Heat olive oil in a large sauté pan over medium-high heat. Add garlic and onions, cooking until tender.
  7. Add ground beef and dry seasonings, cooking until browned, about 3-4 minutes.
  8. Pour in the canned tomatoes and cook for another 5-7 minutes until thickened.
  9. Spoon the beef mixture into each baked potato half.
  10. Top with guacamole, cheddar cheese, pico de gallo, and sour cream. Serve warm.

Notes

For a spicier kick, add jalapeños or hot sauce to the beef mixture. For vegetarian option, substitute ground beef with cooked black beans or lentils.
