Fresh Spring Rolls with Peanut Sauce

Light and fresh, these spring rolls are filled with vegetables and served with a creamy peanut sauce for dipping.

Ingredients

  • Rice paper wrappers
  • Lettuce leaves
  • Carrots, julienned
  • Cucumbers, julienned
  • Bell peppers, thinly sliced
  • Fresh herbs (mint, cilantro, basil)
  • Peanut butter
  • Soy sauce
  • Lime juice
  • Garlic, minced
  • Water

Instructions

  1. Prepare the peanut sauce by mixing peanut butter, soy sauce, lime juice, and minced garlic in a bowl. Add water to achieve your desired consistency.
  2. Fill a shallow bowl with warm water. Dip a rice paper wrapper into the water for about 10-15 seconds until it is soft.
  3. Lay the softened wrapper on a clean surface and place a few lettuce leaves, julienned vegetables, and fresh herbs in the center.
  4. Fold the sides of the wrapper over the filling and roll tightly from the bottom.
  5. Repeat with remaining wrappers and filling.
  6. Serve with the creamy peanut sauce for dipping.

Notes

Use fresh vegetables and herbs for the best flavor. Roll tightly to keep fillings from falling out. Keep a damp towel over finished rolls to prevent drying.
