Gluten Free Lemon Brownies

Delicious and zesty gluten-free brownies, soft and chewy with fresh lemon flavor.

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1 cup coconut sugar
  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix almond flour, coconut flour, coconut sugar, baking powder, and salt in a large bowl.
  3. Whisk together the applesauce, melted coconut oil, eggs, lemon juice, and lemon zest in another bowl.
  4. Combine the wet ingredients with the dry ingredients and mix until well combined.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool completely in the pan.
  8. Mix powdered sugar with lemon juice until smooth for the glaze, then drizzle over the brownies.
  9. Cut into squares and serve.

Notes

Store in an airtight container at room temperature for up to 3 days, refrigerate for about a week, or freeze for up to three months.
