Hobo Casserole with Ground Beef

A hearty and satisfying dish combining ground beef, potatoes, and cheese, perfect for comfort food lovers.

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup beef broth or water
  • 1/4 cup milk (optional, for creaminess)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Cook the ground beef until browned, then drain the excess fat.
  3. Add onion and garlic to the skillet, cooking until soft.
  4. Layer the sliced potatoes on top of the beef in the baking dish. Season with salt, pepper, Italian seasoning, and paprika.
  5. Top with shredded cheddar cheese and grated Parmesan cheese.
  6. Pour the beef broth around the edges. If using milk, add it here for creaminess.
  7. Cover with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes, until the potatoes are tender and cheese is bubbly.
  9. Garnish with fresh parsley before serving.

Notes

Store leftovers in the refrigerator for 3-4 days or freeze for 2-3 months.
