Honey Lime Chicken with Mango Salsa

A bright and fresh dish featuring juicy chicken topped with a sweet and tangy mango salsa, perfect for weeknight dinners or weekend meals.

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and diced (optional)
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Mix the marinade: whisk honey, lime juice, olive oil, salt, and pepper in a bowl.
  2. Marinate the chicken: put the chicken breasts in a resealable bag or container and pour the marinade over them. Chill for at least 30 minutes, up to 2 hours.
  3. Preheat your grill or oven to 375°F (190°C).
  4. Cook the chicken: grill the chicken 6–7 minutes per side or bake 25–30 minutes until it reaches 165°F (75°C) inside.
  5. Make the salsa: while the chicken cooks, combine diced mango, red onion, jalapeño (if using), and chopped cilantro in a bowl. Stir gently.
  6. Rest and serve: let the chicken rest a few minutes after cooking, slice it, and top with the mango salsa.

Notes

Store cooked chicken and salsa in separate airtight containers for up to 3 days. Reheat chicken gently and add salsa fresh afterward.
