Irresistible Mango Cookies

Soft and chewy mango cookies packed with tropical flavor, oats, and coconut.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh mango
  • 1/2 cup oats
  • 1/2 cup shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, and salt in a bowl.
  3. Beat together the softened butter, brown sugar, and granulated sugar until creamy in another bowl.
  4. Add in the egg and vanilla extract; mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and mix well.
  6. Fold in the diced mango, oats, and shredded coconut.
  7. Drop tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until golden.
  9. Let cool before serving.

Notes

Best enjoyed fresh from the oven. Can serve with vanilla ice cream.
