Lemon Cookies

Delightfully sweet and tangy lemon cookies that brighten up any occasion.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream the butter and granulated sugar until fluffy.
  4. Add the egg, lemon zest, lemon juice, vanilla extract, and almond extract; mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Scoop tablespoon-sized balls of dough and place them on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool slightly and dust with powdered sugar before serving.

Notes

For extra lemon flavor, add more lemon zest. Store in an airtight container for up to one week, or freeze for up to three months.
