Lemon Crumb Bars

A delightful treat combining a buttery crust with a tangy lemon filling, perfect for lemon lovers.

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Additional powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. Combine the flour and powdered sugar in a medium bowl. Cut in the butter until the mixture resembles coarse crumbs. Press this mixture into the bottom of the prepared baking dish.
  3. Bake for 15-20 minutes until the top is lightly golden.
  4. Whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until smooth in a separate bowl. Pour this lemon mixture over the baked crust.
  5. Bake for an additional 20-25 minutes until set.
  6. Let the bars cool completely, then dust with powdered sugar before cutting into squares and serving.

Notes

For the best flavor, use fresh lemons and consider adding more powdered sugar for a sweeter filling.
