Lemon Zucchini Pasta

A quick and fresh lemon zucchini pasta dish that’s perfect for weeknight meals.

Ingredients

  • 8 ounces bowtie pasta
  • 2 medium zucchini, sliced
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh basil, for garnish (optional)

Instructions

  1. Cook bowtie pasta according to package instructions.
  2. Heat olive oil over medium heat in a skillet and sauté minced garlic until fragrant.
  3. Add sliced zucchini to the skillet and cook until tender.
  4. Zest and juice the lemon, then add to the skillet with cooked pasta.
  5. Season with salt, pepper, and fresh basil if desired.
  6. Toss everything together and serve warm.

Notes

Add extra lemon zest on top for more bright flavor. This dish pairs well with a green salad or steamed vegetables.
