Slow Cooker Garlic Butter Beef with Potatoes

A comforting meal of tender beef and soft potatoes, slow-cooked in flavorful garlic butter.

  • 2.5 lbs beef chuck roast, cut into large chunks
  • Salt and black pepper, to taste
  • 2 tbsp olive oil (for searing, optional)
  • 6 tbsp unsalted butter, melted
  • 5 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • 2 lbs baby Yukon Gold potatoes, halved
  • 1/2 cup low-sodium beef broth
  • 1 medium onion, sliced (optional)
  • 1 cup carrots, chopped (optional)

Instructions

  1. Pat the beef chunks dry and season them with salt and pepper.
  2. Heat olive oil in a skillet and sear the beef for 2-3 minutes on each side until browned (optional).
  3. Place the halved potatoes in the slow cooker. Add the beef chunks, onion, and carrots if using.
  4. Melt the butter in a bowl and stir in minced garlic, herbs, red pepper flakes, and chopped parsley.
  5. Pour the beef broth over the beef and potatoes. Drizzle the garlic butter sauce on top and toss gently to combine.
  6. Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the beef is tender.
  7. Adjust salt and pepper to taste before serving. Serve warm, garnished with extra parsley.

Notes

For added flavor, marinate the beef beforehand. Feel free to add more vegetables for nutrition.
