Spring Herbed Pea and Lemon Pasta Salad

A bright and refreshing pasta salad featuring fresh peas, cherry tomatoes, and herbs, perfect for any occasion.

Ingredients

  • 8 ounces pasta
  • 1 cup fresh peas (or frozen, thawed)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh herbs (like parsley, basil, or mint), chopped
  • Zest and juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, fresh peas, cherry tomatoes, red onion, and herbs.
  3. In a small bowl, whisk together the lemon zest, lemon juice, olive oil, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Adjust seasoning as needed and serve chilled or at room temperature.
