Tasty Chicken Salad Cucumber Roll Ups

Quick, fresh, and light cucumber rolls filled with creamy chicken salad, perfect as a snack or light lunch.

Ingredients

  • 2 large cucumbers
  • 1 cup cooked chicken, diced
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish

Instructions

  1. Cut the cucumbers in half lengthwise and scoop out the seeds using a spoon.
  2. Mix together the diced chicken, mayonnaise, Greek yogurt, celery, red onion, salt, and pepper in a bowl until well combined.
  3. Spoon the chicken salad mixture onto each cucumber half and roll them up.
  4. Garnish with fresh dill or parsley and slice into bite-sized pieces.
  5. Serve chilled.

Notes

Pat the cucumber halves dry before adding the filling to avoid soggy rolls. Chill the cucumbers and filling before assembling for a cleaner roll.
